Peel and thinly slice onions
Add butter and onion to a pan and sauté till they are translucent and beginning to brown. This should take about 5 to 8 minutes.
Add stock and simmer for 25 minutes
Grate the cheese before layering it in individual oven proof soup bowls. Start with a thin layer, then top with bread, another layer of cheese and so on. Make sure to reserve some cheese for later.
When the soup has finished simmering, spoon the soup (and the onions!) into the individual soup bowls and top with the remaining cheese.
Place under grill for 5 to 10 minutes, keeping an eye on it till the cheese is browned. The dishes will be hot, so remove carefully. Let cool slightly and enjoy!
