- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup grated cheese (cheddar or your favourite cheese)
- 3 eggs, separated
- A pinch of salt
- A pinch of pepper

Preheat your oven to 180°C. Grease 4 small ramekins or a single larger baking dish with a little butter.

In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a paste. Gradually add the milk, stirring constantly to avoid lumps, until the mixture thickens into a smooth sauce. Remove from heat and stir in the grated cheese until melted and smooth. Season with a pinch of salt and pepper.

Separate the eggs, placing the yolks in one bowl and the whites in another. Stir the egg yolks into the cheese sauce one at a time, mixing well after each addition.

Using a hand mixer or whisk, beat the egg whites until they form stiff peaks (this means when you lift the whisk, the egg whites stand up without collapsing).

Gently fold the egg whites into the cheese sauce mixture. Be careful not to overmix; you want to keep as much air in the mixture as possible.

Spoon the mixture into the prepared ramekins, filling each about three-quarters full.

Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes (30-35 minutes for a larger dish) until the soufflés are puffed up and golden brown.

Serve immediately while the soufflés are still puffed up and warm. Enjoy!
